The gastronomic variety in San Javier is based on three main ingredients: fish, fruits and vegetables from our land. Salted fish such as mullet or gilthead bream, salted fish roe (salazón), mojama and delicious prawns combine perfectly with lettuce, tomatoes, artichokes, raw or cooked peppers, coming directly from the orchard. Our dish par excellence is the Caldero, a genuinely seafood stew with rice and good fish with a secret ingredient, the ñoras.
